- 2 cups all-purpose flour
- 1 cup old-fashioned rolled oats
- 1/2 cup chopped walnuts
- 1/2 cup dried apples, finely chopped
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1/2 cup honey, plus extra for glazing
- 1/4 cup brown sugar
- 1/4 cup melted butter
- 1 large egg
- 1/2 cup buttermilk (or milk + 1/2 tsp lemon juice)
- 1 tsp vanilla extract
- Optional: edible flowers or fresh thyme for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, oats, walnuts, dried apples, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
- In another bowl, whisk honey, brown sugar, melted butter, egg, buttermilk, and vanilla until smooth.
- Pour wet ingredients into dry and stir until just combined—do not overmix.
- Pour batter into prepared pan. Smooth top.
- Bake 50–60 minutes, or until a toothpick comes out clean.
- Let cool in pan 10 minutes, then transfer to a wire rack.
- Warm 2 tbsp honey gently and brush over the warm loaf. Garnish with thyme or edible flowers if desired.
Notes
- For a vegan version, swap egg for 1 flax egg (1 tbsp ground flax + 3 tbsp water), butter for coconut oil, and use maple syrup instead of honey.
- Store covered at room temp 2–3 days, or wrap and freeze up to 1 month.
- Slice thin—it’s dense and rich! Perfect toasted with butter or honey.
