  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup honey, plus extra for glazing
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 1 large egg
  • 1/2 cup buttermilk (or milk + 1/2 tsp lemon juice)
  • 1 tsp vanilla extract
  • Optional: edible flowers or fresh thyme for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, oats, walnuts, dried apples, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
  3. In another bowl, whisk honey, brown sugar, melted butter, egg, buttermilk, and vanilla until smooth.
  4. Pour wet ingredients into dry and stir until just combined—do not overmix.
  5. Pour batter into prepared pan. Smooth top.
  6. Bake 50–60 minutes, or until a toothpick comes out clean.
  7. Let cool in pan 10 minutes, then transfer to a wire rack.
  8. Warm 2 tbsp honey gently and brush over the warm loaf. Garnish with thyme or edible flowers if desired.

Notes

  • For a vegan version, swap egg for 1 flax egg (1 tbsp ground flax + 3 tbsp water), butter for coconut oil, and use maple syrup instead of honey.
  • Store covered at room temp 2–3 days, or wrap and freeze up to 1 month.
