Instructions
- Preheat oven to 350°F (175°C). Grease a 6-cup muffin tin or line with paper liners.
- In a medium bowl, whisk together orange zest, orange juice, honey, and eggs until smooth.
- Stir in melted butter, thenfold in almond flour, oat flour, baking powder, cinnamon, cloves, and salt until just combined.
- Divide batter evenly among muffin cups. Bake 18–22 minutes, or until a toothpick comes out clean.
- Cool cakes in pan 5 minutes, then transfer to a wire rack.
- Once cool, top each cake with 1–2 edible gold sparklers and a fresh orange slice.
- Serve warm or at room temperature, with a cup of tea for maximum hobbit hospitality.
Notes
- For vegan option: replace honey with ⅓ cup pure maple syrup and use flax eggs (2 tbsp ground flax + 5 tbsp water).
- Double the glaze (2 tbsp honey + 1 tsp orange juice) and drizzle warm cakes for extra sparkle.
