Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line with parchment.
- In a bowl, whisk oats, flour, walnuts, dates, orange peel (if using), baking powder, cinnamon, cloves, and salt.
- In another bowl, whisk honey, melted butter, egg, milk, and vanilla until smooth.
- Stir wet ingredients into dry until just combined—do not overmix.
- Pour batter into pan and smooth top.
- Bake 25–30 minutes, or until a toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to a wire rack. Drizzle with extra honey before serving.
Notes
- For a vegan version: substitute flax egg (1 tbsp ground flax + 3 tbsp water), use coconut oil instead of butter, and ensure honey is replaced with maple syrup.
- Add 1/4 cup raisins or chopped apples for extra moisture and hobbit-style rustic flavor.
