Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan or two 6-cup muffin tins.
- In a bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat eggs, maple syrup, honey, oil, and vanilla until smooth.
- Gradually fold dry ingredients into wet until just combined. Stir in pecans.
- Pour batter into pan(s). Bake 25–30 min (muffins) or 35–42 min (loaf) until a toothpick comes out clean.
- Let cool 10 min in pan, then transfer to a rack. Drizzle with extra honey + crushed pecans before serving.
Notes
- Toast pecans in a skillet over medium heat 3–4 minutes until fragrant and lightly golden for deeper flavor.
- For a vegan version, substitute flax eggs (2 tbsp ground flax + 5 tbsp water) and use agave instead of honey.
- Store in an airtight container for up to 4 days—or freeze slices for up to 2 months.
