Ingredients

- 1 lb beef stew meat, cubed
- 2 large carrots, chopped
- 2 parsnips, chopped
- 2 potatoes, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme and rosemary
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add carrots, parsnips, potatoes, herbs, salt, and pepper. Cook for 5 minutes.
- Return beef to the pot, pour in beef broth, and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours until meat is tender and vegetables are cooked.
- Serve hot with fresh bread or crusty rolls.
Notes
- You can add peas or green beans for extra color and flavor.
- For a thicker stew, mash some potatoes and mix back in.
