Ingredients

  • 1 lb beef stew meat, cubed
  • 2 large carrots, chopped
  • 2 parsnips, chopped
  • 2 potatoes, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme and rosemary

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and cook until browned. Remove and set aside.
  3. In the same pot, sauté onions and garlic until translucent.
  4. Add carrots, parsnips, potatoes, herbs, salt, and pepper. Cook for 5 minutes.
  5. Return beef to the pot, pour in beef broth, and bring to a boil.
  6. Reduce heat, cover, and simmer for 1.5 hours until meat is tender and vegetables are cooked.
  7. Serve hot with fresh bread or crusty rolls.

  • You can add peas or green beans for extra color and flavor.
