- 1 Zucchini, sliced
- 1 Bell Pepper, cut into chunks
- 1 Cup Cherry Tomatoes
- 1 Red Onion, quartered
- 1 Cup Mushrooms, whole
- 2 Tablespoons Olive Oil
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Italian Herbs (Oregano, Basil, Thyme)
- Salt and Pepper to taste
- Skewers (wooden or metal)
Instructions
- Wash and chop the vegetables into appropriate sizes.
- Thread the vegetables onto the skewers in an alternating fashion.
- Preheat the grill and brush it with olive oil to prevent sticking.
- Grill the skewers for about 10-15 minutes, turning occasionally until tender.
- Remove from grill, let cool slightly, and serve on a platter.

- Store leftover skewers in an airtight container in the refrigerator for up to 3 days.
