Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare the shortcake layers: In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or forks until the mixture resembles coarse crumbs. Add vanilla and milk, stirring gently until just combined. Do not overmix.
- Shape and bake: Drop spoonfuls of the batter onto the prepared baking sheet. Bake for 12-15 minutes, or until golden brown. Let cool slightly.
- Prepare the strawberries: Toss sliced strawberries with powdered sugar and let sit for at least 15 minutes to macerate, releasing their juices.
- Whip the cream: In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form.
- Assemble the shortcake: Slice the baked shortcakes in half horizontally. Spoon a generous layer of strawberries onto the bottom half, top with whipped cream, then cap with the other shortcake layer. Repeat for additional servings.
- Garnish and serve: Decorate with mint leaves and additional strawberries if desired for a stunning presentation.
