Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine wet ingredients: In a separate bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract.
- Incorporate wet into dry: Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Add optional decorations: Fold in blueberries or mini chocolate chips if desired.
- Fill muffin cups: Spoon batter into the prepared tin, filling each about 2/3 full.
- Bake: Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let muffins cool for 5 minutes in the pan, then transfer to a wire rack and serve warm.
