- 200g dark chocolate (70% cocoa or higher)
- 150g unsalted butter
- 150g granulated sugar
- 3 large eggs
- 100g all-purpose flour
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Preheat oven to 220°C (430°F). Grease ramekins or muffin tin with butter and dust with cocoa powder.
- In a heatproof bowl, melt dark chocolate and butter over simmering water until smooth. Cool slightly.
- Whisk in sugar, then add eggs one at a time, mixing well to achieve a glossy batter.
- Stir in vanilla extract and sea salt.
- Fold in flour gently until just combined.
- Distribute batter evenly among prepared ramekins.
- Bake for 12-15 minutes until edges are set but centers remain gooey.
- Cool slightly before unmolding. Serve with powdered sugar or dark ganache, paired with coffee or red wine.
Notes
- Ensure not to overbake to keep the molten center intact.
- You can prepare the batter a day in advance and refrigerate; bake just before serving.
- For a vegan version, substitute with dairy-free chocolate and vegan butter.
