Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place potatoes in a large bowl and toss with olive oil, rosemary, garlic, salt, and pepper.
- Spread evenly on prepared baking sheet in a single layer.
- Roast for 35–40 minutes, flipping halfway, until golden and crispy.
- Garnish with fresh rosemary sprigs before serving.
Notes
- For extra crispiness, parboil potatoes for 5 minutes before roasting.
- Add chopped thyme or sage for variation.
