  • 2 tablespoons vegetable oil
  • 2 lbs ground beef
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 2 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium-high heat. Add ground beef and chopped onion. Cook until beef is browned and onion is soft, about 8 minutes.
  2. Add garlic and cook for 1 more minute.
  3. Stir in drained beans, crushed tomatoes, ketchup, brown sugar, chili powder, and cumin. Season with salt and pepper.
  4. Bring to a simmer, then reduce heat to low. Cover and let simmer for 20 minutes, stirring occasionally.
  5. Taste and adjust seasoning as needed. Serve hot, topped with optional cheese or sour cream.

  • Kevin’s chili is intentionally simple — no fancy spices or complex techniques!
