- 2 cups blueberries
- 1 cup strawberries, sliced
- 1 cup blackberries
- 1 cup granulated sugar
- ¼ cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pie crust (store-bought or homemade)
- 1 tablespoon butter, cut into small pieces
- 1 egg, for egg wash
Instructions
- Wash the berries thoroughly and drain them.
- In a bowl, mix berries with sugar, cornstarch, lemon juice, and vanilla extract; let sit for 15 minutes.
- Roll out the pie crust and fit it into the pie dish; add the berry filling and dot with butter.
- Preheat oven to 425°F (220°C) and brush the crust with egg wash. Bake for 30-35 minutes until golden and bubbling.
- Allow to cool on a wire rack before serving.
Notes
- Store in an airtight container in the refrigerator for 3-4 days.
- Can be frozen for up to 3 months; thaw overnight in the fridge before reheating.
- Pairs well with vanilla ice cream or whipped cream for serving.
