Ingredients
- 2 lbs boneless, skinless chicken thighs or breasts (cut into chunks for skewering)
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon hot sauce (optional for spice)
- Wooden or metal skewers
- Fresh herbs for garnish (rosemary or thyme)
Instructions
- Start by cleaning and cutting the chicken into evenly sized chunks.
- Mix olive oil, smoked paprika, garlic powder, onion powder, cumin, black pepper, salt, and hot sauce (if using) in a bowl. Marinate the chicken for at least 30 minutes.
- If using wooden skewers, soak them in water for 15 minutes. Preheat your grill, campfire, or broiler.
- Thread the chicken chunks onto the skewers, alternating with vegetables if desired.
- Cook on the grill or over an open fire, turning occasionally, until fully cooked and charred, about 10-15 minutes.
- Use a meat thermometer to ensure internal temperature reaches 165°F (75°C). Let rest a few minutes, then garnish with herbs before serving.
Notes
- Let marinated chicken sit for at least 30 minutes for better flavor.
- Soaking wooden skewers prevents burning.
- You can add vegetables like bell peppers and onions for extra flavor and color.
- For extra smoky flavor, cook over a campfire or charcoal grill.
