Ingredients

  • 2 pounds lean beef (such as flank steak or round steak), thinly sliced against the grain
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. In a large mixing bowl, whisk together soy sauce, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and red pepper flakes. Toss in the beef.
  2. Transfer the beef to a resealable bag or container and marinate in the refrigerator for at least 6 hours, preferably overnight.
  3. Remove the marinated beef and arrange slices in a single layer on dehydrator trays or oven-safe wire racks.
  4. Set dehydrator to 160Β°F (71Β°C) or preheat oven to 170Β°F (77Β°C) and dehydrate beef for 3-6 hours until dry and leathery.
  5. Once dehydrated, cool completely and store in an airtight container at room temperature.
