- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 can black beans (15 oz), drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- Cook the meat: In a large pot, heat the olive oil over medium heat. Add the ground beef or turkey, cook until browned, about 5-7 minutes. Drain excess fat.
- Sauté vegetables: Add chopped onion and minced garlic to the pot. Cook until translucent, around 3 minutes.
- Add spices: Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook for 1 minute to release flavors.
- Combine ingredients: Pour in diced tomatoes and beans. Stir well to incorporate all ingredients.
- Simmer: Reduce heat, cover, and simmer for 30-45 minutes. Stir occasionally to prevent sticking.
- Serve hot: Ladle into bowls and top with shredded cheese, sour cream, and chopped cilantro if desired.
Notes
- Feel free to add chopped jalapeños for extra heat.
- Using lean ground turkey makes the dish lighter.
- You can prepare this chili a day ahead to enhance flavors.
- Serve with cornbread or crusty bread for a complete meal.
