Ingredients
Scale
- 1 ½ cups all-purpose flour
- 2 tbsp sugar
- 1/4 tsp salt
- 2 tbsp unsalted butter, softened
- 1/2 cup white wine vinegar or Marsala wine
- Vegetable oil for frying
- 1 cup ricotta cheese (preferably whole milk)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Optional: mini chocolate chips, candied orange peel, chopped pistachios
Instructions
- In a large mixing bowl, combine the flour, sugar, and salt. Add the softened butter and mix until crumbly.
- Gradually pour in the wine or Marsala wine, mixing until the dough forms a cohesive ball. Knead gently for 5 minutes.
- Divide the dough into small portions, wrap in plastic, and let rest for 30 minutes.
- Roll out the dough on a floured surface to about 1/8-inch thickness.
- Use a round cookie cutter (about 3 inches diameter) to cut out circles.
- Wrap each circle around a metal cannoli tube, sealing the edge with a little water.
- Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes.
- Drain on paper towels and cool completely before removing the metal tubes.
- In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract.
- Mix until smooth and creamy, then fold in any optional toppings like mini chocolate chips or candied orange peel.
- For a smoother, chilled filling, consider using the Ninja Air Fryer Pro Crisp & Roast 4-in-1, which can assist in quick cooling.
- Fill a pastry bag fitted with a round tip with the ricotta mixture.
- Gently pipe the filling into each cooled shell, filling from both ends for an even distribution.
- Optionally, dip the ends of the cannolis into chopped pistachios or chocolate chips.
Notes
- Make sure to thoroughly cool the shells after frying to maintain crispiness.
- Store unfilled shells in an airtight container at room temperature if not filling immediately.
- Fill just before serving to keep cannolis fresh and crispy.
