Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery, sauté for 5-7 minutes until softened. Add garlic and cook for another minute.
  2. Add beef or venison cubes to the pot, sear on all sides until browned. Season with salt, pepper, and smoked paprika.
  3. Pour in beef broth, add potatoes, parsnips, mushrooms, bay leaves, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours.
  4. Remove bay leaves, stir in parsley, adjust seasoning, and serve hot.
