- 1.5 lbs beef or venison, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 cup diced potatoes
- 1 cup diced parsnips
- 1 cup chopped mushrooms
- 1/2 cup chopped fresh parsley
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery, sauté for 5-7 minutes until softened. Add garlic and cook for another minute.
- Add beef or venison cubes to the pot, sear on all sides until browned. Season with salt, pepper, and smoked paprika.
- Pour in beef broth, add potatoes, parsnips, mushrooms, bay leaves, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours.
- Remove bay leaves, stir in parsley, adjust seasoning, and serve hot.
