Instructions
- Activate the yeast: In a small bowl, combine warm water and honey. Sprinkle the yeast on top and let sit for 10 minutes until bubbly.
- Mix the dry ingredients: In a large mixing bowl, whisk together the whole wheat flour, rye flour, sea salt, and optional seeds.
- Add wet ingredients: Pour in the activated yeast mixture, olive oil, and malt extract. Stir until a sticky dough forms.
- Knead the dough: Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth.
- First rise: Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Shape the bread: Punch down the dough, shape it into a round or oblong loaf, and place on a parchment-lined baking sheet.
- Second rise: Cover and let rise for another 30-45 minutes.
- Bake: Preheat your oven to 400°F (200°C). Score the top of the loaf with a sharp knife, then bake for 35-40 minutes until a deep, dark crust forms and the bread sounds hollow when tapped.
- Cool: Remove from oven, let cool on a wire rack before slicing.
