Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough into two equal parts, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- On a floured surface, roll out one dough portion to about ¼ inch thickness.
- Use lightning bolt-shaped cookie cutters or freehand to cut out lightning shapes. For best results, you can use a template from online tutorials.
- Transfer the cookies to the prepared baking sheet, spacing them apart.
- Bake for 8-10 minutes or until the edges are light golden brown. Let the cookies cool completely on a wire rack.
