Instructions
- In a saucepan, combine cherries, sugar, cornstarch, vanilla, and lemon juice.
- Cook over medium heat, stirring constantly until the mixture thickens (about 5-7 minutes).
- Remove from heat and let it cool slightly.
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface.
- Cut the pastry into squares (about 4×4 inches).
- Spoon a generous amount of cherry filling into the center of each square.
- Fold the pastry over to create a triangle or rectangle and seal the edges with a fork or by pinching.
- Brush the tops with beaten egg for a golden finish.
- Place the prepared turnovers on a lined baking sheet.
- Bake in the oven for 20-25 minutes, until golden brown.
- Let cool slightly before dusting with powdered sugar if desired.
Notes
- Store leftover turnovers in an airtight container in the refrigerator for up to 2 days.
- Reheat in a toaster oven or oven at 350°F (175°C) for 10 minutes to keep crispy.
- For longer storage, freeze and reheat directly from the freezer for a quick dessert.
