Instructions
- In a large pot, add diced potatoes and cover with water. Bring to a boil and cook for 10-15 minutes until fork-tender.
- Drain the cooked potatoes and allow to cool. In a large mixing bowl, combine cooled potatoes, chopped green onions, and bell peppers.
- In a separate bowl, mix mayonnaise, mustard, salt, and pepper to create the creamy dressing, then pour it over the potato mixture and gently toss until well-coated. Adjust seasoning if necessary.
