Instructions
- In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Gradually add the spinach puree while mixing until a dough forms. Knead the dough on a floured surface until smooth, then let it rest for 30 minutes covered.
- In a bowl, mix the ricotta cheese, cheddar cheese, grated Parmesan, and spices. Season with salt and pepper to taste. Make sure everything is thoroughly combined for a delicious filling!
- Roll out the rested dough into a thin sheet. Cut it into rectangles and place a tablespoon of the cheese filling on one end of each piece. Roll them up tightly, ensuring the filling is secure inside.
- Preheat the oven to 375°F (190°C). Arrange the reptile rolls on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden finish. Bake for about 20-25 minutes or until they are golden brown and the cheese is bubbling.
Notes
- If you have any leftovers, allow the rolls to cool completely, then store them in an airtight container in the refrigerator for up to three days.
- You can freeze them for up to a month. Just reheat in the oven when you’re ready to indulge again.
