- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 600g cream cheese, softened
- 200g sour cream
- 150g caster sugar
- 3 large eggs
- 2 tsp vanilla extract
- 1/2 cup butterbeer syrup
- Food coloring gel: blue, purple, silver
- Edible glitter and star-shaped sprinkles
Instructions
- Mix crushed digestive biscuits with melted butter and press into the base of a 9-inch springform pan. Chill for 30 minutes.
- Preheat oven to 160°C (320°F). Beat cream cheese, sour cream, sugar, and vanilla until smooth. Add eggs one at a time, blending well.
- Fold in butterbeer syrup. Divide batter into bowls and tint with food coloring gel to create a galaxy effect.
- Pour the batter over the chilled crust, swirling colors gently. Bake for 50-55 minutes until set. Cool completely.
- Prepare the cosmic glaze by mixing powdered sugar with a little milk, then add food coloring gels to create a starry night effect. Pour over the cooled cheesecake and decorate with edible glitter, star sprinkles.
Notes
- Chill the cheesecake for at least 4 hours or overnight for best results.
- Use gel food coloring for vibrant, saturated colors without affecting the texture.
