- 1 lb ground beef
- 1 medium onion, chopped
- 3 carrots, diced
- 3 potatoes, diced
- 4 cups beef broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Optional toppings: shredded cheese, chopped green onions, crispy bacon
Instructions
- In a large pot, cook ground beef until browned. Drain excess fat.
- Add chopped onion and cook until translucent.
- Stir in carrots, potatoes, tomato paste, Worcestershire sauce, salt, and pepper.
- Pour in beef broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Stir in milk and shredded cheddar cheese until melted and smooth.
- Serve hot, topped with additional cheese, green onions, and bacon if desired.
Notes
- Use sharp cheddar for a more intense cheesy flavor.
- For a thicker soup, mash some of the potatoes before serving.
