- 1 lb ground beef (80% lean)
- 4 slices thick-cut bacon
- 4 slices American cheese
- 2 tbsp butter, softened
- 1 large yellow onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp brown sugar
- 1 tsp smoked paprika
- 2 cloves garlic, minced
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- 4 brioche buns, split
- Salt & freshly ground black pepper
- Pinch of black truffle salt (optional)
Instructions
- In a bowl, mix minced garlic with mayonnaise, lemon juice, and a pinch of black pepper to make garlic aioli. Set aside.
- In a skillet over medium heat, cook bacon until crisp. Drain on paper towels; reserve 1 tbsp fat.
- Add onions to skillet with reserved fat, brown sugar, and smoked paprika. Cook 12–15 minutes until deeply caramelized. Cover to keep warm.
- Divide beef into 4 patties, season generously with salt & pepper.
- Grill or sear patties 4–5 minutes per side for medium, topping each with cheese during last minute to melt.
- Toast buns lightly in remaining bacon fat or in a dry skillet.
- Assemble burgers: bottom bun → garlic aioli → lettuce (if using) → patty → bacon → onions → top bun.
- Sprinkle withtruffle salt for a subtle gourmet touch.
Notes
- For a messy-authentic Mystic Grill vibe, serve open-faced with extra toppings on the side.
- Make onions ahead—they keep 3 days refrigerated.
- No truffle salt? Drizzle a drop of truffle oil on the aioli instead.
