Instructions
- Preheat oven to 150°C (300°F). Line baking sheets with parchment paper.
- Sieve powdered sugar and almond flour into a bowl.
- Whisk egg whites until frothy, then gradually add granulated sugar and gel food coloring. Whip until stiff peaks form.
- Gently fold dry ingredients into the meringue until smooth and glossy.
- Pipe the batter onto prepared baking sheets to form 1.5-inch circles.
- Let the macarons rest for 30 minutes before baking to develop a skin.
- Bake for 15-20 minutes until shells are firm. Cool completely.
- Prepare filling by mixing softened butter, powdered sugar, and vanilla. Sandwich between pairs of macaron shells.
