Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic; sauté until translucent, about 5 minutes.
- Add tomatoes, vegetable broth, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Puree the soup with an immersion blender or in batches using a blender until smooth.
- Pour into bowls, garnish with basil, olive oil drizzles, and optional spooky decorations.
Notes
- You can add a splash of cream for extra richness.
- Use fresh, ripe tomatoes for the best flavor.
- For a spicier version, add a pinch of red pepper flakes.
