Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup fresh or frozen blueberries
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 cup milk (dairy or plant-based)
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- Blue food coloring (to achieve the blue fur effect)
- Optional: blue sprinkles or edible glitter for extra flair
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
- In a separate bowl, combine the milk, vegetable oil, eggs, and blue food coloring until well mixed.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
- Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack.
Notes
- Add edible glitter or blue sprinkles to enhance the “blue fur” look for themed parties.
- Use natural blue ingredients like butterfly pea flower tea for a more natural color.
- For best results, do not overmix the batter to keep muffins fluffy.
