Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
- Mix flour, powdered sugar, and salt. Cut in cold butter until crumbly. Press into the bottom of the prepared dish and bake for 20 minutes.
- In a bowl, whisk eggs, sugar, flour, lemon juice, lemon zest, and baking powder until smooth.
- Pour over baked crust and bake for an additional 20 minutes until set and lightly golden.
- Let cool completely, then refrigerate for at least 2 hours. Optional: glaze with lemon juice and powdered sugar for extra shine.
