- 1/4 cup powdered sugar
- 1/2 cup cold unsalted butter, cubed
- 2-3 tablespoons ice water
- 1/2 cup golden syrup (or light corn syrup)
- 3/4 cup dark brown sugar
- 1/4 cup heavy cream
- 1 large egg (optional)
- Zest of 1/2 lemon
- Pinch of salt
Instructions
- In a bowl, whisk flour, powdered sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water gradually to form a dough.
- Shape dough into a disk, wrap, and refrigerate 30 minutes.
- Roll dough to fit a 9-inch tart pan, trim edges, and chill 15 minutes. Preheat oven to 375°F (190°C).
- In a saucepan, warm golden syrup, brown sugar, and cream until smooth. Remove from heat and stir in lemon zest. If using, whisk in the egg off the heat.
- Pour filling into crust and bake 25–30 minutes until set and golden. Cool before slicing.
Notes
- Chill dough thoroughly for a flakier crust.
- Let tart cool completely before slicing for clean cuts.
- For a dairy-free version, substitute plant-based butter and coconut cream.
