- 2 cups all-purpose flour
- 1/2 cup honey
- 1/2 cup packed brown sugar
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional glaze: 2 tablespoons honey mixed with 1 tablespoon water
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or mini cake pans.
- Whisk together flour, baking powder, baking soda, cinnamon, and salt in a bowl.
- In another bowl, whisk honey, brown sugar, milk, melted butter, and egg until smooth.
- Combine wet and dry ingredients just until blended; do not overmix.
- Divide batter among muffin cups. Bake 18–22 minutes until a toothpick comes out clean. Cool briefly, then glaze if desired.
Notes
- For gluten-free, substitute 1:1 gluten-free flour blend.
- To make vegan, use plant-based butter and milk and an aquafaba or flax egg.
- Store in an airtight container for up to 3 days.
