Instructions
- Prepare eggs: hard boil, cool, peel, halve, mix yolk filling with mayonnaise, beet juice, salt; pipe back into whites and dust with paprika.
- Roast chicken: preheat oven to 425°F, rub thighs with oil, garlic powder, thyme, salt, pepper; roast 30-40 minutes until 165°F internal.
- Gravestone Mash: keep mashed potatoes warm; fold in sour cream and chives, season.
- Salad: segment oranges, toss greens with olive oil and balsamic; top with orange segments and red onion.
- Mousse: melt chocolate, whip cream until soft peaks, fold together, refrigerate until set; serve with raspberries.
