- 12 egg roll wrappers
- 1 cup crushed pineapple, well drained
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract (optional)
- Oil for frying
Instructions
- In a bowl, combine pineapple, sugar, and lemon juice; stir in slurry and vanilla; let cool.
- Place 1-2 teaspoons filling near wrapper corner; roll tightly and seal edges with slurry.
- Heat oil to 350°F (175°C). Fry rolls until golden, 2-3 minutes; drain.
- Serve warm with or without a light dusting of sugar or serve with dipping sauce.
Notes
- Keep filling cool to prevent soggy wrappers.
- Seal edges thoroughly to avoid unrolling during frying.
- For baked version, brush with oil and bake at 425°F (220°C) for 12-15 minutes, turning once.
