Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- Cream butter and sugars until light and fluffy.
- Beat in egg and vanilla (and butterscotch extract, if using).
- Stir in flour, baking soda, cream of tartar, and salt until just combined.
- Fold in butterscotch chips (and optional white chocolate).
- Roll dough into 1-inch balls, place on sheets, and flatten slightly.
- Bake 10-12 minutes until edges are lightly golden. Cool completely.
- For filling, beat butter until creamy, add powdered sugar, vanilla, and enough cream to reach spreading consistency.
- Spread filling on one cookie and top with another to form sandwiches.
Notes
- Do not overbake; cookies will continue to firm as they cool.
- For dairy-free option, use vegan butter and dairy-free butterscotch chips.
- Chill dough 15 minutes for neater edges if desired.
