- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/4 cup powdered sugar for dusting
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch pan with parchment.
- Combine flour, powdered sugar, and butter; mix until crumbly and press into pan.
- Bake 18-20 minutes until light golden.
- Whisk eggs, sugar, flour, lemon juice, zest, and salt. Pour over warm crust.
- Bake 18-20 minutes until set. Cool completely and dust with powdered sugar.
Notes
- Keep bars refrigerated for up to 5 days.
- Substitute lemon zest with orange for a citrus twist.
