- 1 cup rolled oats
- 1/2 cup almond flour
- 1/3 cup shredded coconut
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 2 tablespoons coconut oil, melted
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional: 1/4 cup chopped dried fruit or dark chocolate chips
Instructions
- In a bowl, mix oats, almond flour, shredded coconut, cinnamon, and salt.
- Warm honey and almond butter with melted coconut oil until smooth.
- Combine wet and dry ingredients; stir until evenly moistened.
- Press mixture into the prepared pan and bake at 350°F (175°C) for 18-22 minutes until golden.
- Cool completely, then cut into 8 bars and serve.
Notes
- Line an 8×8 inch pan with parchment for easy removal.
- Press mixture firmly to compact bars.
- Cool completely before slicing for clean edges.
- Store in an airtight container up to 5 days; refrigerate for longer shelf life.
