Ingredients

  • 1/2 cup almond flour
  • 1/3 cup shredded coconut
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chopped dried fruit or dark chocolate chips

Instructions

  1. In a bowl, mix oats, almond flour, shredded coconut, cinnamon, and salt.
  2. Warm honey and almond butter with melted coconut oil until smooth.
  3. Combine wet and dry ingredients; stir until evenly moistened.
  4. Press mixture into the prepared pan and bake at 350°F (175°C) for 18-22 minutes until golden.
  5. Cool completely, then cut into 8 bars and serve.
