- 1/2 cup (100 g) granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup (120 ml) milk
- 1/3 cup (80 ml) vegetable oil or melted butter
- 1/4 cup (60 ml) lemon juice
- 2 tbsp lemon zest
- 1/2 tsp vanilla extract
- For glaze: 1 cup (120 g) powdered sugar, 2-3 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round pan.
- Whisk dry ingredients in a bowl.
- Whisk wet ingredients in another bowl.
- Combine wet and dry ingredients until batter is smooth.
- Pour into pan and bake 25-30 minutes until a toothpick comes out clean.
- Cool, then whisk glaze and drizzle over cake; let set before slicing.

- Bring ingredients to room temperature for best texture.
- Vegan option: use plant-based milk and oil/butter substitute.
- Store covered at room temp 2-3 days or refrigerate for longer.
