- 125 g unsalted butter, softened
- 60 g caster sugar
- 1 large egg
- 1 tsp vanilla extract
- 300 g self-raising flour
- Pinch of salt
- Jam for filling (raspberry or strawberry)
- Icing sugar for dusting
- Milk, 1-2 tbsp (for icing)
- Optional pink food colouring (a few drops)
Instructions
- Beat butter and sugar until light and fluffy.
- Beat in egg and vanilla until smooth.
- Stir in flour and salt to form a soft dough; wrap and chill 30 minutes.
- Roll to 0.5 cm thick; cut rounds and bake 12-15 minutes at 180C (350F) until edges are light golden.
- Cool completely, spread jam on one biscuit, sandwich with another.
- Mix icing sugar with enough milk to make a glaze; drizzle over biscuits and let set.
Notes
- Chill dough for easier handling and flakier texture.
- Dust with icing sugar just before serving.
- Try different jams for variations (strawberry, raspberry, or blackberry).
