A British-inspired, jam-filled biscuit sandwich topped with a pink icing glaze, perfect for tea time or special movie-night snacks.

Ingredients

Scale
  • 125 g unsalted butter, softened
  • 60 g caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 300 g self-raising flour
  • Pinch of salt
  • Jam for filling (raspberry or strawberry)
  • Icing sugar for dusting
  • Milk, 1-2 tbsp (for icing)
  • Optional pink food colouring (a few drops)

Instructions

  1. Beat butter and sugar until light and fluffy.
  2. Beat in egg and vanilla until smooth.
  3. Stir in flour and salt to form a soft dough; wrap and chill 30 minutes.
  4. Roll to 0.5 cm thick; cut rounds and bake 12-15 minutes at 180C (350F) until edges are light golden.
  5. Cool completely, spread jam on one biscuit, sandwich with another.
  6. Mix icing sugar with enough milk to make a glaze; drizzle over biscuits and let set.
