- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2/3 cup milk
- 1 1/2 teaspoons vanilla extract
- Green food coloring
- For frosting: 1 cup unsalted butter, 2-3 cups powdered sugar, 1-2 tablespoons milk, green food coloring
- Candy eyes or edible candy decorations
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Beat butter and sugar until light and creamy. Add eggs one at a time, then mix in vanilla.
- Alternate adding flour and milk, until batter is smooth. Add enough green coloring to reach a bright alien shade.
- Fill liners 2/3 full and bake for 15-18 minutes. Cool completely.
- Prepare frosting: beat butter, gradually add powdered sugar, milk, and more color until smooth and fluffy.
- Tint frosting bright green and pipe swirls on cooled cupcakes. Add candy eyes and sprinkles to create alien faces.
