- 2 arepas or cornmeal discs
- 1/2 cup shredded mozzarella or queso blanco
- 1 tablespoon butter
- 1/4 cup pico de gallo or diced tomato & onion
- Fresh cilantro for garnish
- Salt to taste
Instructions
- Prepare arepas by halving the dough or cooking discs until lightly crispy.
- Fill with cheese and reheat until cheese melts.
- Top with pico de gallo and cilantro.
- Serve warm with a dollop of sour cream or guacamole.

- Make ahead: assemble and refrigerate; reheat before serving.
- Can substitute queso fresco for mozzarella.
