Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment.
- Whisk flour, sugar, and salt in a bowl.
- Whisk egg whites and water until foamy, then whisk in melted butter and extracts.
- Gently fold dry ingredients into wet until just combined.
- Drop batter by rounded teaspoon onto sheet; spread into 3 inch circles.
- Bake 8-10 minutes until edges are light golden.
- Carefully lift cookies with a spatula and flip over on a muffin tin or curved form; insert a fortune slip and fold into a cookie shape while warm; let cool.
- Repeat with remaining batter. Cool completely before storage.

- For extra crispness, bake a little longer and cool on rack.
