- 1.5 lb beef tenderloin or Brahmin meat, trimmed
- 2 tbsp olive oil
- 8 oz cremini mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 shallot, minced
- 2 tbsp fresh thyme leaves
- 2 tbsp Dijon mustard
- 1 sheet puff pastry, thawed (or 2 sheets)
- 1 egg, beaten
- Salt and pepper to taste
- Optional: 2 tbsp red wine (for duxelles)
Instructions
- Season beef, sear in hot oil until browned; let rest.
- In the same pan, sauté shallot, garlic, and mushrooms until moisture evaporates; stir in thyme and red wine if using; cool.
- Roll out pastry, spread cooled mushroom mixture, place beef, wrap and seal; brush with egg wash.
- Bake at 400F (200C) for 25-30 minutes until crust is golden and meat reaches desired doneness. Rest before slicing.
Notes
- Chill the mushroom duxelles before assembling to prevent soggy pastry.
- A meat thermometer helps; aim for 125-130F for medium-rare after resting.
- Brush pastry with egg wash for a shiny, golden crust.
