Instructions
- Whisk flour, sugar, baking powder, salt, and cinnamon (if using) in a bowl.
- Whisk milk, egg, and vanilla in a separate bowl; stir into dry ingredients just until combined.
- Heat oil to 360F (182C) in a deep, heavy pot.
- Dollop batter into hot oil in small batches; fry 2-3 minutes per side until puffed and golden brown.
- Drain on paper towels, dust with powdered sugar (and cocoa powder if desired), and serve with hot cocoa.
Notes
- Do not overmix the batter to keep the beignets light and airy.
- Maintain oil temperature around 360F (182C) for best texture.
