- 8 oz spaghetti
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1 tsp sugar (optional)
- Salt and black pepper, to taste
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil and cook spaghetti until al dente, reserving 1/2 cup of pasta water.
- Meanwhile, heat olive oil in a skillet over medium heat. Sauté garlic and onion until translucent, about 3-4 minutes.
- Add crushed tomatoes, tomato paste, oregano, red pepper flakes (if using), and sugar. Simmer 10-12 minutes, stirring occasionally. Season with salt and pepper.
- Toss the cooked pasta with the sauce, adding pasta water as needed to reach desired consistency. Stir in fresh basil.
- Serve with grated Parmesan on top and a drizzle of olive oil.
Notes
- Salt the pasta water generously to flavor the noodles.
- Reserve pasta water to loosen the sauce if needed.
- You can add cooked ground beef or sausage if desired, but this recipe is delicious as a vegetarian option.
