- 2 racks pork spare ribs (about 4-5 lb)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme leaves

- 1 teaspoon cracked black pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes (optional)
- 1/4 cup honey
Instructions
- Preheat oven to 300°F (150°C).
- Combine oil, garlic, herbs, salt, pepper, paprika, and chili flakes to form a paste; rub over ribs.
- Place ribs on a lined baking sheet, cover with foil, and roast 3 hours until tender.
- Increase oven to 425°F (220°C); brush ribs with honey and roast 10-15 minutes until caramelized.
- Let rest 10 minutes, slice between bones, and serve with pan juices.
Notes
- Tip: Remove the membrane from the rib rack for more even seasoning.
- Marinate the ribs with rub for 1–2 hours or overnight for deeper flavor.
- Roast low and slow, then finish at high heat with a honey glaze to caramelize.
