- 2 lb beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 cup beef stock
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1 sprig fresh thyme
- Salt and pepper to taste
Instructions
- Season beef with salt and pepper. Brown in batches in a large heavy pot with olive oil; set aside.
- In the same pot, sauté onion and garlic until translucent, about 3–4 minutes.
- Add carrots, potatoes, tomato paste, and spices; cook 2 minutes, stirring to coat.
- Return beef to the pot. Add beef stock and wine (if using) and thyme; bring to a simmer.
- Cover and simmer over low heat for about 1 1/2 to 2 hours, until beef is tender and sauce thickens. Adjust salt and pepper.
- Serve hot with crusty bread or buttered rolls. Garnish with fresh thyme if desired.
