- 8 tbsp cold unsalted butter, cubed
- 3-4 tbsp ice water
- 1 1/2 cups fresh blueberries
- 1/4 cup granulated sugar (for filling)
- 1 tsp lemon juice
- 1 tablespoon cornstarch
- 1 egg for wash (optional)
- Fresh blueberries and powdered sugar for garnish
Instructions
- Whisk flour, sugar, and salt. Cut in butter until crumbly. Add ice water gradually until dough just comes together. Chill 30 minutes.
- Roll dough into a rough circle on parchment. Toss blueberries with sugar, lemon juice, and cornstarch; set filling in center of dough.
- Fold edges over filling to create a rustic tart. Brush crust with beaten egg if using.
- Bake at 375°F (190°C) for 40-45 minutes until crust is golden and filling is bubbling. Cool before slicing.
- Garnish with powdered sugar and extra blueberries if desired.
Notes
- Keep dough cold for a flakier crust.
- If filling leaks, cover edges with foil to prevent over-browning.
- Serve with vanilla cream for contrast.
