Ingredients
- Lamb Kofta Kebabs: 1 lb ground lamb, 1 small onion, 2 cloves garlic, 1 tsp ground cumin, 1/2 tsp ground coriander, 1/2 tsp cinnamon, 1/4 tsp allspice, 1/4 cup chopped parsley, salt, pepper
- Saffron Rice Pilaf: 1 cup basmati rice, 2 cups chicken broth, 1/4 tsp saffron threads, 2 tbsp butter
- Roasted Chickpeas: 1 can chickpeas, 1 tbsp olive oil, 1/2 tsp cumin, 1/2 tsp paprika, salt
- Date & Pistachio Salad: dates, pistachios, orange zest, mint
- Pistachio Baklava Bites: phyllo sheets, pistachios, butter, honey
- Spiced Yogurt Drizzle: yogurt, lemon juice, garlic (optional)
Instructions
- Mix lamb with onion, garlic and spices; form into kofta and grill or broil until browned and cooked through.
- Rinse rice, soak saffron in warm water, then cook with broth until fluffy; stir in butter.
- Toss chickpeas with oil and spices; roast at 400F until crisp.
- Assemble salad with dates, pistachios, orange zest and mint.
- Bake phyllo bites, fill with chopped pistachios and drizzle with honey syrup; serve with yogurt drizzle.
