- 1.5 lb boneless chicken thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, zest and juice
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 2 cups baby potatoes, halved
- 2 cups mixed vegetables (carrot, green beans, bell pepper)
- 1/2 cup dry white wine or chicken broth
- 1/4 cup heavy cream (optional)
- Fresh parsley for garnish
Instructions
- Preheat oven to 425F. Toss potatoes with 1 tablespoon olive oil, salt, and pepper; roast 25-30 minutes.
- Season chicken with thyme, rosemary, salt, and pepper. Sear in 1 tablespoon olive oil until browned.
- Add garlic and mushrooms; sauté 2-3 minutes. Deglaze with wine or broth.
- Return chicken to pan, pour in cream if using, simmer 5-7 minutes. Serve with roasted potatoes and vegetables.
Notes
- Marinade chicken 15-20 minutes for deeper flavor
- Wine can be substituted with extra broth for a dairy-free version
- Rest meat 5 minutes before slicing
