- 1/2 teaspoon peppermint extract
- 2 cups mini marshmallows
- 1/2 cup crushed peppermint candies
- 1 tablespoon unsalted butter
- Mini candy eyes or small chocolate chips for eyes
- Green food coloring (optional)
- Sea salt flakes for garnish (optional)
Instructions
- Line a sheet pan with parchment and set aside.
- Melt white chocolate with butter in a microwave in 30-second bursts, stirring until smooth. Stir in peppermint extract and optional green coloring.
- Stir in mini marshmallows and half of the crushed peppermint candy to create a chewy center.
- Scoop mounds onto the parchment, shape into toad bodies, and press on candy eyes.
- Chill 30 minutes, then dust with remaining crushed candy for a crispy shell.
Notes
- For a vegan version, use dairy-free white chocolate.
- Store in an airtight container up to 3 days in the fridge.
- Dip the cooled toads in melted chocolate for a glossy finish.
